El Rancho Buffet Opens in East Windsor

The new restaurant is located in the Twin Rivers Shopping Center.

Mayor Janice S. Mironov joined Laura Melchor, owner of El Rancho Restaurant, and Laura’s Uncle Rudy Martinez, the restaurant’s head chef, as they cut the ribbon for the grand opening of their new restaurant. El Rancho offers homemade Mexican and Central American food, including: pupusas (stuffed tortillas with pork or chicken, beans and cheese), garnachas (tortillas stuffed with ground beef, cabbage, tomato sauce and cheese), tacos, and many other freshly prepared foods. El Rancho makes homemade sour cream, salsa and guacamole.

Uncle Rudy, the head chef, has over 17 years of experience in the restaurant business. Current hours of operation are Monday through Thursday from 10 a.m. to 10 p.m., Friday and Saturday from 10 a.m. to 11 p.m., and Sunday from 10 a.m. to 9 p.m.

Laura Melchor, Rudy's niece and a 10-year East Windsor resident, worked while in high school as a waitress in her Uncle Rudy’s restaurant, El Gusto Bien in Hightstown. Learning a great deal from her uncle about the restaurant business, Laura decided to plan to open a restaurant of her own one day. After years of planning, Laura Melchor chose to open her restaurant in East Windsor, in the Twin Rivers Shopping Center which Melchor noted is within walking distance for many people in the area.

Mayor Mironov stated, “It is nice to have Laura Melchor, who is a resident of East Windsor Township, fulfill her dream to open up a restaurant business in East Windsor Township. Both Laura and her Uncle Rudy bring a great deal of successful restaurant experience into their new location. El Rancho Restaurant is a family-owned business that will add additional variety to the list of current restaurants in our community.”
