Recipe: Whole Wheat Pasta with Chicken and Fresh Pesto

A quick homemade meal.

Pesto Ingredients: 

  • 2 ½ cups Fresh Basil Leaves
  • About ½ cup Olive Oil (add more as necessary)
  • 3 cloves Garlic
  • 2/3 cup Pine Nuts
  • ½ cup shredded Parmesan Cheese
  • Salt and Pepper

In a food processor, chop garlic and pine nuts. Slowly add in fresh basil leaves, followed by olive oil. The gradually add Parmesan cheese and a pinch of both salt and pepper – as you like it.

  • Boneless, skinless chicken breasts
  • 2 tablespoons Olive Oil
  • Garlic, chopped
  • Whole Wheat Pasta

Heat olive oil in a pan. Add garlic and chicken. Cook thoroughly. Cut into pieces.

Boil water with a pinch of salt and a little bit of olive oil. Cook penne according to the box instructions.

Mix penne, pesto and chicken. Sprinkle with grated Parmesan and serve.

*Cooks Note: You can sauté spinach in olive oil and garlic, and add it to the dish.
